Tasty Tuesdays - Oven baked potato wedges

We had more bread crumbs that I knew what to do with, so I searched for easy recipes that would use them up. This is a variation of a recipe I found on allRecipes.com.
The recipe was a hit so it is now part of my YummySoup recipe book.

Ingredients:

● 4 tbsp olive oil
● 5 large russet potatoes, peeled and cut into wedges
● 1 cup seasoned bread crumbs

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Spray baking sheet with oil.

2. Toss potato wedges in oil, and roll in bread crumbs. Place wedges on prepared baking sheet.

3. Bake in preheated oven for 20 minutes. Remove from oven and turn wedges; cook for 10 to 15 minutes, or until tender.

Tasty Tuesdays - Irish Stew

This is a great stew that is perfect for the fall or winter months. I can even get Christophe to eat this one.

Yield: 8 servings
Prep Time: 15 Min
Cooking Time: 30 Min

Ingredients:
● 6 small carrots, chopped
● 4 medium potatoes , cubed
● 1 parsnip, peeled and cubed
● 1/2 turnip, peeled and cubed
● 1 onion , chopped
● 1/2 tsp black pepper
● 2 liters water, or as needed
● 3 cubes vegetarian beef bouillon
● 1 1/2 cups green split peas
● 1 cup pearl barley or jobs tears, (can be substituted for small noodles)

Directions:

Place all vegetables into a large saucepan and saute until golden. Add remainder of ingredients bring to a boil and cook until all ingredients are tender. Approximately 30 minutes.

Serve and enjoy.
